Nicolas Cheveau is one of Caviste’s favourite producers. His style is one of elegance over exuberance and restraint over flamboyance. Fabrice and Sophie Lorenze, along with Joshi Hishomito, set up Domaine Terres de Velle in 2007 having spent the previous 10 years working alongside Alex Gambal, the American micro negociant in Beaune. In 2010 they moved there cellar to a little house on the Mersault/Auxey border on the bank of the stream ‘Velle’. They now own vineyards in all the major communes of the Beaune, as well as parcels of Bourgogne Chardonnay and Pinot Noir, which they make to their usual high standard and restrained style. There are many variations but the wine made by the Farruads is among the finer examples. The vineyards are above the village of Vacqueyras formed of clay, chalk and large galet stones. They blend includes 15% Viognier, along with 80% Grenache Blanc and 5% Clairette, achieving a yield of around 20 ha/hl. The fruit is slowly pressed in a pneumatic press and co fermented in a demi-muid, with 6 months of ageing and battonage on light lees. The Farrruad, Marie and Jean Luc, used to sell fruit to the Coop unitl 2006, when on the advice from John Livingstone Learmonth they started bottling there own, organic, fruit. The wines are generally scented, elegant and true to the the soil from which they derive.
